Begin by adding your Betty Crocker Carrot Mix to your mixing bowl, along with the required ingredients on pack, but replacing the water with the pineapple juice. Mix well for 2-3 minutes and then pour your mix evenly into two greased cake tins. Bake using the instructions on pack!

While your cake is baking, empty a tub of Betty’s Vanilla Icing into a bowl and add the passion fruit pulp, mixing well.

Once your cake has cooled, ice lavishly with your delicious passion fruit icing, using it to sandwich your cakes together and then spreading on top. For an extra fruit finish, place a few slices of pretty star-shaped carambola on top, or any other fruit you desire…
