All You Need Is ...

Cupcake

  • 1 box Betty Crocker™ Vanilla Cupcake Mix
  • 60 ml water (4 tbsp)
  • 30 ml vegetable oil (2 tbsp)
  • 2 medium free range eggs
  • 9 strawberries, halved for the centres

Icing

  • 425 g Betty Crocker™ Vanilla Icing
  • Few drops of pink food colouring
  • 9 fresh strawberries, sliced for topping

Betty's Easy Steps Hide Images

Preheat your oven to 180°C (160°C for fan assisted ovens) / Gas Mark 4. Line a muffin tin with your cupcake cases.

Mix the eggs, oil, water, and the Betty Crocker’s Vanilla Cupcake Mix gently together and whisk (by hand or electric mixer) for 2-3 minutes until smooth and creamy.

Pour the mixture evenly into the cupcake cases.

Bake in the centre of the oven for 16 minutes or until a rounded knife, inserted fully into the centre of a cupcake comes out clean, then cool on a wire rack.

Prepare when cooked and cooled, hollow out a little of the centre with a spoon and fill with a whole strawberry.

Add a few drops of food colouring to the icing and swirl on top of your cupcakes, then sliced fresh strawberries for real indulgence and a hidden surprise.
